Grilled Barramundi with Smashed Avocado
Ingredients
8 oz skinless Barramundi
½ tsp ground cumin
¼ tsp ground coriander
Salt and pepper
Olive oil spray
2 plum tomatoes, small diced
¼ poblano pepper, small diced
1 lime, juiced
1 lemon juiced
2 scallion, chopped
¼ small red onion, roughly chopped
8 leaves cilantro leaves, chopped
Salt and pepper
1 avocado, smashed
1 lime, juiced
Salt
⅛ tsp chili powder as garnish
Plantain chips, served on side
Directions
Heat grill to medium high heat.
Mix cumin and coriander with salt and pepper.
Spray the Barramundi with olive oil and season with spice blend.
To make the pico, mix all ingredients together and let it sit for 15 minutes.
Cut, crush and mix avocado with lime juice and salt. Place into container and top with chili powder.
Grill Barramundi on each side for 3-4 minutes until cooked through.
Plate or package for to-go.
